Incanum Manuka trees is native to the New Zealand rainforest and produces white, single-petaled flowers.
The activity level is determined by the content of the natural active component MGO (methylglyoxal).
However, MGO is not originally present in Manuka nectar. The key lies in the content of the MGO precursor, dihydroxyacetone (DHA). Bees slowly raise the temperature within the hive environment to 37-39°C, which transforms DHA into MGO.

In other words, MGO is produced only when the Manuka nectar collected by the bees interacts with the environment inside the hive.

To harvest genuine Manuka honey
We determine the hive placement area based on research data of Manuka tree nectar from the Incanaum species, which uniquely contains abundant DHA. And, as part of our production policy, we ensure to minimize stress on the bees as much as possible, relying on natural collection by the bees. This is because we believe that the health of the bees directly affects the quality of Manuka honey, and consequently, the health of our customers. It is a very inefficient harvesting method, but this is the only way to pursue authenticity. Moreover, because of this, each batch becomes truly unique.
